Cauliflower
crust
I crossed the cauliflower recipe with the
cottage cheese crust. The result was chewy, crispy, and awesome. Plus, I
used fat free cottage cheese and greek yogurt, so the only fat was from
the egg.
Mix 1 c. cooked cauliflower (pulsed in the processor til
rice-sized, then really squeezed dry), 1 c. flour, 1/4 c. cottage
cheese, 1/4 c. greek yogurt, 1 egg. Salt and spice to taste. Spread onto
greased, parchment covered baking sheet. Bake at 400 degrees for 30
minutes until crust sets and browns. Then top and bake until toppings
are done."
